Over the course of making many, many, many loaves of sourdough bread I have found that one of the biggest keys to making a great loaf is accurate measurements. To much water and your dough will become runny and hard to handle. To little and it will be dry and hard to stretch. Here is a link to the scale that I use for all my weight measured cooking. With only a couple buttons, it is very simple to use, compact, and has lasted me years so far.
